Every morning, we grind 100% beef in the store, grill it over charcoal right in front of our customers, and serve it with freshly cooked rice from the Hagama pot. We're committed to – the 'three Just’ approach – Just ground, Just grilled, Just cooked’ to provide the 'ultimate hamburger steak experience.’
Just grind
With ground meat, freshness is everything.
We grind our meat fresh every morning, so all the flavors of the meat can be fully savored - we control time and temperature to ensure freshness. The grinding is done in-house, every morning, exclusively in our refrigerated room. During shaping, we work quickly to prevent the heat from our hands from transferring, making sure the meat 'pops' as we bounce it in our hands. Our ground meat is 100% beef.
Just grilled
We serve within a second so customers can enjoy it freshly grilled.
The best taste is eating it hot off the grill. All seats are placed around the grill counter, facing the cooking area. Every seat is a ‘Just grilled premium seat.' Additionally, each serving is kept at 90 grams so that customers can enjoy the freshness to the last bite. The next piece of meat is grilled by our grill-masters, carefully timed to match the pace of each customer.
Just cooked
We constantly cook rice in the Hagama pot, so our guests can enjoy freshly cooked rice.
Japan has an abundance of delicious rice varieties. Because we want to introduce them to our customers, each month, our staff taste-tests and selects rice from different regions. Cooking in a large Hagama pot allows the rice to be circulated and heated evenly, resulting in a fluffy texture. We continuously cook rice in batches, so whether it's the first, second, or third helping, the rice is freshly made.
